Tomorrow I road-trip, so today I made goodies! My very, very favorite cookie is this no-bake chocolate-peanut better-oatmeal cookie that I first tasted way back in kindergarten. And it's my second most requested dessert, only beat out by the brownies.
The ingredients:
Melt the butter, sugar, milk and cocoa together in a saucepan:
Add in the vanilla & peanut butter. Stir until PB is melted and integrated:
Then add the oatmeal. Stir constantly. Let it boil for 1-2 minutes while incorporating oats:
Let the mix rest for 5 minutes off heat to thicken. Then use an ice cream scoop to drop cookies onto wax paper. Let cool.

ReplyDeleteAs Alison said she first tasted those cookies in K. They are a great first for kids to "cook" since the oven is not involved and the heat can be kept low.
