Recipes: Blondies & Brownie cups

Blondies
2 cups packed light brown sugar
1 cup (2 sticks) butter or margarine, melted
2 eggs
2 tsp vanilla extract
2 cups all-purpose flour
1 tsp salt
2/3 cup (each) semi-sweet chocolate chips, white chocolate chips & peanut butter chips

1. Heat oven to 350*, grease 15.5x10.5x1-inch jelly-roll pan. (Baker's note: I use a 9x13 glass baking dish lines with parchment paper, or a dessert-bar baking pan sprayed with cooking spray)

2. Stir together brown sugar and butter; beat in eggs & vanilla until smooth. Add flour & salt, beating until just blended. Stir in all three kinds of chips. Spread batter into prepared pan of choice.

3. Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars. Drizzle Chocolate (recipe follows) randomly over bars. Makes about 72. (Baker's note: I've never gotten 72 out of one recipe, maybe I'm cutting my bars too big!)

Chocolate Drizzle: in microwave-safe bowl, place 1/4 cup semi-sweet chip and 1/4 tsp shortening (do not use butter, margarine, spread or oil!). Microwave on HIGH for 10 seconds to 1 minute; stir until chips are melted and mix is smooth.


Mini Brownie Cups
6 tbs butter or margarine, melted
3/4 cups sugar
1/2 tsp vanilla extract
2 eggs
1/2 cup all-purpose flour
1/4 cup cocoa
1/4 tsp baking powder
1/4 cup finely chopped nuts

1. Heat oven to 350*. Line small muffin cups with paper/foil bake cups. Stir together butter, sugar & vanilla. Add eggs; beat well.

2. In separate bowl, stir together flour, cocoa, baking powder & salt; gradually add to butter mixture, beating with a spoon until well blended (I used a hand mixer). Fill muffin cups 1/2 full with batter; sprinkle nuts over top.

3. Bake 12-15 minutes or until wooden pick inserted in center comes out almost clean. Cool slightly, remove brownies from pan to wire rack. Cool completely.
